Honey-Sesame Sausages

These were YUM! I suggest serving these at your next get together too!

Serves 2-4 (I'm assuming kids).

2 tsp. Olive oil
1  tbsp. Honey
1 tsp.Dijon Mustard
12 good quality cocktail sausages
1 tsp. Sesame-seeds


1- Heat oven to 350 degrees F. Mix together the oil, honey and mustard into a bowl turn to coat them into mixture.

2- Spread sausages onto a non-stick cooking sheet and roast 12-14 minutes. Turning occasionally when almost done sprinkle on sesame seeds. Let cook 1 minute, sausages should be a nice golden color and cooked through.


They weren't fans of the sesame seeds but they liked it all in all! So they give it a big....... 


 Cooking for my Kids.

Since it is summer and I am off from now till Labor Day. I have decided to break from the normal routine of PB&J sandwiches, Mac and Cheese, Last nights leftovers, Ramon noodle soup or anything that I can find. Around Mother's Day I found this great Little Cookbook from Kohl's called The Top 100 Recipes for a Healthy Lunch Box

P/s I am not getting paid to talk about this book, either from the Author or from Kohls. ( But wouldn't that be fun though??)

So I bought it, was 5 bucks why not, My goal this summer is to try at least 2/3 recipes each week and try to share my review with you. I love the school I work in, but sometimes I'm less than impressed when it comes to the lunches they serve. And when it comes to bringing in a lunch from home I want my kids to enjoy and eat their lunch rather than try to enjoy it or trade it (anybody trade lunches in school??. My kids will be going through the district I work in, so in no way I am bashing the District or the food they serve but we all remember school lunches right?? Right now the older 2 are in preschool Stan will be going through his 2nd year this fall.

Anyways to keep it kid friendly and fun I'll give each recipe I share a Happy, Sad or Okay face based on my kids decision and if I can their review in their own words about it.

Today's Recipe.............

BBQ Tofu Baguette ( Cooking time 10+ 8 Minutes + Marinating)

It is a sweet and sticky marinade that gives the tofu a rich gold color with a hint of BBQ flavor. (Which is big for my b/c I really don't like BBQ sauce)

Serves 1, Since I was eating I tripled the recipe (hey I'm pregnant).



What you will need  

This is for 1 serving!

  • Olive Oil
  • 4 1/2 Oz Firm tofu patted dry and cut into 4 long strips
  • 1 small baguette
  • 1 Lettuce Leaf shredded
  • 1 tomato seeded and thinly sliced.

For the Marinade
  • 1 tbsp. Honey or sweet chilli sauce ( I used honey b/c we were out of sweet chilli sauce)
  • 1 tbsp. Tomato Ketchup ( Is there more than one kind??)
  • 1 tbsp. soy sauce ( I used regular b/c that is what we had but I'm sure reduced sodium works well too)
  • 1/4 tsp Smoked Paprika (which I forgot to throw in).

Mix marinade ingredients together, coat the tofu well and let sit at least 1 hour or over night. I only did 1 hour and it tasted good, next time I'll try over night. Now I pan fried mine that was one of the options the second option was to roast it in the oven (20 minutes) but it didn't give a temp.... So I'm guessing 350??? Next time I'll try this too I bet it would have tasted really good.

Keep the marinade so you can brush it on as it cooks (either method).

When the Tofu is cooked, slice open your baguette add in the lettecue, tomato, and tofu (2 slices). Press lightly and enjoy!

It says you can make it a few days before and assemble the day of so you can make this on Sunday to enjoy at lunch on Monday or Tuesday!

Side note Tofu is the richest non-dairy source of calcium in fact 3 1/2 oz  provides about 1/2 the daily allowance recommended for people ages 11-24.


Serve with Cucumbers and Carrots.

Stanley my son (4 1/2) Wasn't sure at first he has had tofu before (they all have) but I think he is starting to go through a mini picky phase. However he loved it, he made a face looking at it, tried it and said "Wow this is really yummy, I could eat this."

Evelyn never put her sandwich down she ate it all, she is almost 2.

McKenna (3) I think has a texture thing with it comes to certain foods and well tofu is a soft, not a crunchy food McKenna likes crunchy foods. However she tasted said "I don't really really like it, but I do." Then she ate all of her sandwich.... So I'm guessing she liked it enough.

Mom and Baby #4 I loved it, it was really good different from the normal everyday sandwich. Baby #4 doesn't have much say but I can feel him kicking around so he must have enjoyed it a little bit.
